Carrageenan

Carrageenan is a naturally occurring family of carbohydrates extracted from red seaweeds. They are essentially large, highly flexible molecules that curl, giving them the ability to form gels even room temperature. Hence, they are widely used as thickeners and stabilizers in the food industry in dairy products, desserts, meats, beverages, dressings, sauces, creams and numerous other segments.

  • The source used forour product is the red seaweed Kappaphycusalvarezii, which is cultivated across the southern coast of India
  • It is approved by FSSAI(Food Safety Standard Authority of India) as a Food Additive and is produced as per JECFA (Joint FAO/WHO Expert Committee on Food Additives)
  • Kappa carrageenan is soluble in hot water and forms a strong, rigid gel with potassium salts and a brittle gel with calcium salts
  • The gels formed are slightly opaque and become clear with sugar addition
